What is this unknown black condiment with an unbelievable taste that we've been seeing increasingly more on our plates? Authentic black garlic from Île d'Orléans, created by Robert Duplain and produced by BALSAÏ, is made from a specific garlic cultivar organically grown on Île d'Orléans, and then fermented and aged on the land
Balsaï is the first producer of organic black garlic in North America. It has developed a unique process to produce black garlic. It's a product resulting from two years of research and development. Beneath a dry coffee-coloured peel, its pods are a shiny charcoal colour, with a soft texture that is supple to the touch and easily cut with a knife. On the palate, you'll enjoy a surprising sweetness; it is slightly tart and sweet, like balsamic vinegar, with hints of candied plum, coffee, chocolate and licorice. Balsaï organic black garlic is rich in umami, a 5th flavour that will transform the taste of your dishes like no other.
What I find exciting is the development of new processes, new technological equipment, and new recipes…I have always said that there's no problem without a solution!Ail noir bio Balsaï
