Oven-baked brie with caramelized apples, fresh cranberries, ice cider, sage and pumpkin seeds

What could be better than a good oven-baked brie with caramelized apples, cranberries and ice cider with your Locaal meal? Serve it as an appetizer or at the end of the meal with the ice cider you used in the recipe.

Ingredients

  • 1 tbsp. (15 ml) unsalted butter
  • 1 small red apple, unseeded and cut in slices
  • ¼ cup (60 ml) maple syrup
  • ¼ cup (60 ml) fresh cranberries (or frozen, thawed)
  • 4 fresh sage leaves, ciseled (facultatif)
  • ¼ cup (60 ml) ice cider
  • 10 ml (2 c. à thé) toasted unsalted pumpkin seeds
  • 1 350 g. Quebec brie cheese (round shaped)

Preparation

  • Preheat the oven at 350°F (180°C).
  • In a skillet, heat the butter at medium-high heat. Add the apple slices and cook for 2 minutes. Add the maple syrup and cranberries. Cook for 2 minutes.
  • Add the sage and ice cider. Let it reduce for 5 to 7 minutes, or until the mixture is syrupy. Remove from the heat and add the pumpkin seeds.
  • Place the cheese in an oven-safe pot and put the caramelized apple and cranberry mixture on top.
  • Cook in the oven for 10 to 15 minutes, or until the cheese has softened.
  • Serve warm, and with fresh bread, croutons or biscotti.

*You can also bake the cheese on aluminum foil. Elevate the foil around the cheese to make sure it doesn’t spread while cooking. Put the caramelized apple mixture around the cheese. Place the cheese in the foil on a baking sheet and cook in the oven.
