With a very fine and delicate taste, summer honey harvested at the end of July is a real floral explosion in the mouth. It is mainly produced from the blossoming of white clover, linden, crucifers and raspberries, but also from a multitude of wild flowers that cover the Upper Laurentians during the month of July. At times, there is also an invigorating, minty freshness that comes from the nectar of the basswood tree. Unpasteurized, classic honey is cold extracted, filtered and liquefied at low temperature in order to preserve the aromas and properties of the honey while benefiting from its liquid texture.
